About You:
The Cost Controller is responsible for monitoring, analyzing, and controlling all food, beverage, and operational costs across upscale restaurant outlets. The role ensures accurate inventory management, cost efficiency, and profitability while maintaining high-quality standards consistent with luxury dining operations.
The Cost Controller works closely with chefs, purchasing, storekeepers, and finance teams to ensure effective cost control systems and support overall business performance.
Key Responsibilities:
Food & Beverage Cost Control:
- Monitor daily food and beverage costs across all restaurant outlets.
- Analyze cost of sales and ensure alignment with budget and targets.
- Prepare and review daily, weekly, and monthly cost reports.
- Identify variances between actual and standard costs and report findings.
Inventory & Stock Management:
- Oversee monthly inventory counts for food, beverage, and operating equipment.
- Ensure accurate stock movement records (receiving, issuing, transfers).
- Set and monitor par stock levels for all outlets and storage areas.
- Investigate stock discrepancies, wastage, and shrinkage.
Menu Costing & Pricing:
- Assist chefs in recipe costing and menu engineering.
- Calculate cost per dish and recommend selling prices to maintain target margins.
- Monitor menu performance and suggest cost optimization improvements.
Purchasing & Receiving Control:
- Verify purchase orders, supplier invoices, and receiving documents.
- Ensure goods received match specifications, quantities, and agreed prices.
- Support supplier price comparisons and cost analysis.
Operational Cost Monitoring:
- Control wastage, over-portioning, and unauthorized consumption.
- Monitor staff meals, complimentary items, and promotions.
- Check POS systems for voids, discounts, and discounts abuse.
Reporting & Analysis:
- Prepare F&B cost reports, variance analysis, and profitability reports.
- Support month-end closing and financial reporting activities.
- Provide insights to management for cost reduction and efficiency improvement.
Compliance & Internal Control:
- Ensure adherence to company policies and internal control procedures.
- Support internal and external audits.
- Maintain accurate records for all stock and cost-related transactions.
Qualifications:
- Bachelor’s degree in Accounting, Finance, Hospitality Management, or related field.
- 2–5 years of experience in cost control within hotels or upscale restaurant groups.
- Strong knowledge of F&B operations and inventory systems.
